Simple One Skillet Japanese BBQ shrimp and cabbage

Here I’m making it with coconut rice but you can serve with soba noodles, quinoa or any side!

Ingredients:

  • 1 bag shredded cabbage (or broccoli slaw, cabbage/carrot blends work too!)

  • Bachan's Japanese BBQ sauce (I use original) 2 Tbsp

  • 1 pound of peeled shrimp (frozen or fresh)

  • 1 can of coconut milk

  • Rice (1 cup uncooked or more if you're big rice people)

  • Garlic Salt

  • Avocado oil/ghee other cooking oil

Assembly:

First, start your coconut rice. Use coconut milk in place of water and cook according to package. if you need more than 1 can, just add water for the difference.

While rice simmers, heat your largest skillet for the veggies and shrimp with a couple tablespoons of oil or ghee.(I use avocado oil here)

Dump the cabbage or whatever veggies you’re using in the oil to sauté. Stir them for a couple minutes until they’re nearly done. The amount is personal preference, but I use about 2/3 of a bag of shredded cabbage. Takes about 5 to 7 minutes to cook. During this time peel your shrimp if needed. Pat them dry.

Once veggies are nearly done, move them to the sides to make a large space in the middle for your shrimp. (Alternatively you can cook the shrimp in a separate pan. I just like using one skillet!)

Place shrimp not overlapping in the middle but they can be close together. Make sure you have enough oil or add a little more if needed. Let them cook for about three minutes, then flip them using a spatula or your fingers (carefully!) like I did.

When the timer goes off on your rice, set it aside. I like to add about 4-5 shakes of garlic salt (1-2 tsp) and mix it thoroughly either while cooking or when it’s done.

Once shrimp have cooked a couple minutes per side stir the veggies and shrimp mix all together. Turn off heat, remove from burner.

Last, add 2 tablespoons of Bachan’s barbecue sauce (14 grams of added sugar.)  If you want more flavor you can add more but it’s personal preference!

Serve shrimp veggie mix either on top of rice or side by side. Enjoy AND share the recipe! Also reheats great for leftovers if you have any!
