Peanut Butter Chocolate Protein Bark

Ingredients:

  • Cookie base: 1/4 cup almond butter (or any nut butter) + 1 Tbsp coconut oil + 2 scoops chocolate protein powder (I used EquipFoods.)

  • Peanut butter middle layer: 1/2 cup white chocolate chips + 1 tsp coconut oil + 2 tbsp peanut butter

  • Chocolate top layer: 1/2 cup chocolate chips + 1 tsp coconut oil

Assembly:

Mix the almond butter and coconut oil together in a small bowl in the microwave for 15 second intervals. Stir in the protein powder. Mix it well then press down across a piece of parchment paper on a cookie sheet. It should be about 1/4 inch thick. Put in the freezer for a few minutes to set while you start on the next layer. Then, melt white chocolate chips, coconut oil and peanut butter in microwave in a small dish for 15 seconds or slightly more until melted and mix thoroughly. Spread this layer over the hardened cookie layer base. Pop back in the freezer for a few minutes. Lastly, melt the chocolate chips and coconut oil the same way then spread over the top. You can keep it frozen, refrigerated or room temperature to enjoy!
