Easy Tostadas Two Ways

Ingredients:

  • Tortillas (I like Siete Almond flour but those can be expensive. Aim for whole wheat and watch for added sugar!)

  • 1 pound of ground beef cooked in taco seasoning

  • 1-2 cups of shredded cabbage or shredded carrots (or any veggies diced/ in thin slices)

  • 1 can of beans (refried pinto or black beans work well)

  • Grated or sliced cheese (I grate my own or used sliced cheddar or monterey jack. Bagged shredded would also work.)

  • Toppings of choice (I do chopped lettuce, gaucamole if I have it, and salsa)

Assembly:

OPTION 1 Cook your meat and veggies and saute them together. Drain if needed, then add taco seasoning/ water, etc according to the package. I layer tortillas across a cookie sheet. First, spread a thin layer of beans then cheese (or wait and add the cheese on top). Then add 1/4 cup or so of the meat/veggie mixture. Spread gently. Pop them into the oven at 375 for 8-10 minutes until they look slightly brown on the edge and the cheese is melted. Serve with toppings of choice.

OPTION 2 Assemble as a layered “tort.” Stack 4-5 tortillas total with mixture in the middle as follows: After one layer of tortilla, beans, meat/veggie mix, cheese, layer another tortilla on top and continue ending with mix and cheese but no top tortilla. Then cook at 375 for 10-15 minutes (but watch for browning). Cooking time will vary based on the size of your tortillas. This is a fun way to serve them since you “slice” it into quarters (or more if larger tortillas) for each serving. Also top with lettuce/salsa/gauc, etc. Enjoy!
