Easy Tostadas Two Ways
Ingredients:
Tortillas (I like Siete Almond flour but those can be expensive. Aim for whole wheat and watch for added sugar!)
1 pound of ground beef cooked in taco seasoning
1-2 cups of shredded cabbage or shredded carrots (or any veggies diced/ in thin slices)
1 can of beans (refried pinto or black beans work well)
Grated or sliced cheese (I grate my own or used sliced cheddar or monterey jack. Bagged shredded would also work.)
Toppings of choice (I do chopped lettuce, gaucamole if I have it, and salsa)
Assembly:
OPTION 1 Cook your meat and veggies and saute them together. Drain if needed, then add taco seasoning/ water, etc according to the package. I layer tortillas across a cookie sheet. First, spread a thin layer of beans then cheese (or wait and add the cheese on top). Then add 1/4 cup or so of the meat/veggie mixture. Spread gently. Pop them into the oven at 375 for 8-10 minutes until they look slightly brown on the edge and the cheese is melted. Serve with toppings of choice.
OPTION 2 Assemble as a layered “tort.” Stack 4-5 tortillas total with mixture in the middle as follows: After one layer of tortilla, beans, meat/veggie mix, cheese, layer another tortilla on top and continue ending with mix and cheese but no top tortilla. Then cook at 375 for 10-15 minutes (but watch for browning). Cooking time will vary based on the size of your tortillas. This is a fun way to serve them since you “slice” it into quarters (or more if larger tortillas) for each serving. Also top with lettuce/salsa/gauc, etc. Enjoy!
