Ridiculously Simple Black Bean Salad

Here’s the 5 ingredient black bean salad plus a quick dressing that’s great to have for lunches at home or on the go or a rock star side.

Ingredients:

  • 2 cups drained black beans (cooked, in cartons or cans, approximately 2 combined).

  • 1/2 red onion, diced

  • 1 cup chopped cucumber

  • 1 pint of grape tomatoes, halved or quartered

  • 1 cup of chopped cilantro (if you don’t like cilantro you could use basil or parsley)

  • Dressing (3 Tbsp olive oil, juice of one lime, 2 teaspoons cumin). You can easily use a lemon if you don’t have a lime but I like the southwestern kick of lime here.

  • optional avocado and cheese garnish

Assembly:

Throw all the ingredients in a bowl. Whisk dressing together separately than toss into salad mix. I like topping with half to a whole fresh avocado before serving plus grating a little cheese on (pepperjack or queso fresco are my personal favorites but any cheese would be good!)
