Creamy Sausage, Sweet Potato and Kale Soup
Ingredients:
1 pound ground italian sausage
4-5 pieces of bacon, cooked and crumbled (optional but adds a great taste kick! Try to find hormone/antibiotic free, no added nitrites or nitrates)
1 small yellow onion, diced
2 garlic cloves, minced
2 tsp dried italian herbs
3-4 sweet potatoes, diced
32 ounces chicken broth (I like organic bone broth for the added protein, collagen and nutrients!)
1 can of coconut milk
4 cups approximately of chopped kale (a large bunch)
salt and pepper to taste (we like salt in our cooking!)
Assembly:
Precook your bacon or cook in separate pan while soup is cooking.
Heat large pot or dutch oven over medium heat. Once hot add the sausage and brown, break up as it cooks. Once it’s nearly done, add the onion, garlic, italian seasoning, salt and pepper. Let everything cook for about 5-7 minutes until the onions look tender.
Next, add the potatoes and broth and bring to a boil. Reduce the heat and let them simmer for 15 ish minutes until the potatoes are cooked through. Then, stir in the can of coconut milk. Lastly, add the chopped kale at the end and let soften for a few minutes. Lastly, stir in bacon crumbles then serve! It tastes GREAT too for leftovers after the flavors marinate a bit.
