Easy Baked Salmon

I came up with this one day and make a variation of it regularly for baked salmon. It’s super easy and adds a nice flavor and variety. If you like creamy parmesan herb flavors then this one’s for you. It’s easy to cook on a cookie sheet and throw some veggies drizzled with avocado oil/ salt and pepper too! (Note to do this mayo-free, use half avocado or olive oil and half panko plus your cheese and herbs to make a paste you can still use as a topping!)

Ingredients:

  • Salmon filet (any size works I do it with a nice sized piece for the whole family)

  • 3/4 cup of mayonnaise (ideally Avocado Oil)

  • 1/2 cup grated parmesan cheese

  • 1 Tsp dried Italian herbs

  • Salt and pepper to taste

  • Optionally…. sometimes I add about 2 Tbsp of panko bread crumbs into the topping mix but you can make it without them just as well.

  • lemon, juice of one lemon on top of fish when it’s done

Assembly:

Cook your salmon however you usually do. I bake it at 400 and cover it with a sprinkle of avocado oil and salt and pepper before it goes in the oven. Depending on the size of your fish total cooking time is probably 20-25 minutes but will be less if using smaller pieces. It should be opaque and flaky when pulled apart with a fork when done.

While it’s cooking mix your topping in a bowl (mayo, cheese, herbs, salt and pepper and optional bread crumbs). Watch your fish and when it has just a few minutes left, remove it from the oven and spread the mayo/cheese/herb mixture over the top. Return it to the oven on Broil for 3-4 minutes, watching carefully so it doesn’t burn but just lightly browns.

Before serving, sprinkle a dash of fresh lemon juice on top of each serving.
