My favorite meatballs

These are my favorite and when you use chickpea or whole wheat spaghetti and a hearty portion of garlic sauteed spinach on the side, this spaghetti and meatballs can serve up a healthy balanced meal!

Ingredients:

  • 1.5 pounds grass fed ground beef

  • 1/2 pound mild italian sausage

  • 1/2 onion, diced

  • 3 garlic cloves, minced

  • 1 cup bread crumbs or panko

  • 1 cup grated parmesan (I use freshly grated)

  • 1/4 cup fresh parsley, chopped (can used dried but fresh is more flavorful)

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • 1 pound of spaghetti or pasta of choice

  • NOTE: I sautee a huge pack of spinach in ghee and minced garlic for a large veggie side — totally optional!

Assembly:

Mix up the meatball mix but don’t over mix. Roll into 1.5 ish size meatballs on a greased cookie sheet. Bake at 400 degrees for about 20 minutes but check a couple minutes before. They should be slightly brown when done. Assemble however you want but I like to warm the sauce and meatballs in a pan together before serving it with the pasta.
