Shallot Vinaigrette that totally elevates your salads

Super simple. All mixed up with an immersion blender or mini food processor.

Ingredients:

  • 1/2 cup olive oil

  • 1/2 Tbsp champagne vinegar

  • 1/2 small shallot (near garlic and onions in the produce area)

  • 1 tsp dijon mustard

  • 1/2 tsp (optional) of maple syrup. I usually leave this out now. You can try it first then add it in to see.

  • hearty salt and pepper to taste

Assembly:

Mix it all up and adjust to taste. If the shallot bite is too strong add a dash more of every ingredient. Also, I usually double this and keep it in the fridge to use all week. Shake before serving it though!
